It’s no secret that most children do not feel like eating vegetables. Many parents therefore worry about the impact this will have on their children’s health.

In some cases, children refuse to eat their vegetables because of taste. Others, because of the look. Whatever the reason,  the little ones are typically reluctant when it comes to eating their vegetables. 

There is actually a logical explanation for this. Both children and adults are attracted to different tastes, especially those that are sweet.

We instinctively reject bitter tastes, such as certain green vegetables. This is due to a defense mechanism in childhood, which relates bitterness to “poison”.

However, there are ways in which the situation can be reversed. One of the best ways is to use vegetables in tasteful and easy recipes. Here are a few ideas.

This means that most of the time,  the same ingredient, presented in a new way, will seem much more appealing. 

And that’s exactly what these delicious spinach recipes do. The idea is to prepare this vegetable in a new and exciting way. Getting kids involved in preparing a meal also helps, by engaging them in the process.

1. Spinach donuts

First,  cook the chopped spinach. Next, say it, and squeeze the water off. Mix 2 eggs, 50 g flour and 4 tbsp. milk. Season to taste with salt and pepper, then mix everything together.

Finally, shape the mixture into small steaks, and fry them in oil in a frying pan until golden brown on both sides. You can serve hot or cold and they go well with any sauce. 

2. Spinach gnocchi

Everyone likes gnocchi. This classic and encouraging Italian dish is an ideal way to get more vegetables into your children’s diets  without them noticing. In fact, the green color of spinach can even make the gnocchi more appealing.

To make this delicious recipe with spinach, first  boil, strain and season the vegetables (use about 450 grams). Then blend the spinach into a paste. Next, boil 900 g of potatoes (cook them with the skin so you retain the nutrients), peel them and mash them.

When the mashed potatoes are ready,  mix it with the spinach paste, and add 140 g of flour. Mix it all so you have a smooth dough.

Finally, shape the dough into small pieces, to make the gnocchi, and cook them as you normally would. Your kids will definitely love them!

3. Meatballs with spinach

This is one of the best, delicious recipes with spinach, and also one of the simplest. Kids can help make these meatballs. 

Mix 400 g of minced meat and minced spinach in a bowl. You can chop the vegetables by hand, or use a blender. Hatch an egg into the bowl.

Place two slices of bread (without hard crusts) in a bowl of milk. Once the bread has absorbed the milk, put it in the bowl with the meat and spinach.

Mix it all together, then shape the mixture into meatballs. Dip these in flour, then in beaten eggs and finally in breadcrumbs. Next, fry them.

You can also cook the meatballs over low heat, along with some vegetable broth. You choose the accompaniment (such as rice) and the type of sauce.

Another tip:  if you prefer white meat, you can follow the same instructions for making meatballs with chicken and spinach. They will surely be a hit!

4. Pasta with spinach pesto

This is a great spinach recipe that your kids will definitely love. Why? Almost all children like pasta. Try making it with this delicious sauce. Your kids will not even notice that they are eating vegetables. 

Here’s how to do it:  Instead of making a traditional pesto with basil, make it with spinach. Boil 200 g fresh spinach, then blend it with 25 g walnuts, 25 g peeled almonds, 50 g parmesan cheese and 1 tsp. lemon juice.

Once it is all mixed together into a pesto sauce, season it to taste. Cook a pasta of your choice. Simple as that. An easy and nutritious meal you can enjoy with your children.

Although these recipes focus on using spinach, you can also try making them with another vegetable. The most important thing is to add variety and nutritional value to your children’s diet.
